Ingredients

  • 1 envelope Active Dry Yeast
  • 1/4 cup very warm Water
  • 1/3 cup Sugar
  • 1/4 cup Butter
  • 1 teaspoon Salt
  • 1 cup scalding hot Milk
  • 1 Egg lightly beaten
  • 4 1/2 cups sifted All-Purpose Flour
  • 2 tablespoons melted Butter for brushing the rolls.

Instructions

  • Sprinkle the yeast over very warm water in a large bowl (Very warm water should feel comfortably warm when dropped on wrist.)

  • Stir until yeast dissolves.

  • Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted.

  • Cool mixture to 105 to 115°F.

  • Add milk mixture to the yeast, then beat in egg.

  • Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough.

  • Use some of the remaining 1/2 cup of the flour to dust a pastry cloth.

  • Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands).

  • Place dough in a warm buttered bowl. Turn greased side up.

  • Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours. Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth.

  • Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.

  • Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter.

  • Place in neat rows, not quite touching, in a well-buttered 13 x 9 x 2-inch pan.

  • Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes.

  • Brush tops of rolls with melted butter or margarine, then bake in a 375°F oven for 18 to 20 minutes or until nicely browned.

  • Serve warm with plenty of butter.

This recipe yields about 2 dozen rolls.

FAQs

What kind of rolls does Golden Corral use? ›

Golden Corral's signature Yeast Rolls are a labor of love- mixed and kneaded, proofed and cut, refrigerated for 24 hours, proofed again, then baked until golden brown. We make thousands of these rolls per week.

Should I brush yeast rolls before baking? ›

BUTTER TOPS:

Don't forget to brush the tops of the dinner rolls with butter! This is what gives the top of the rolls that irresistible golden sheen, infuses them with flavor, tenderness and promotes even bowing.

Why are my yeast rolls tough? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

How many calories in a Golden Corral bread roll? ›

Golden Corral Homestyle Yeast Rolls (1 serving) contains 31g total carbs, 30g net carbs, 3.5g fat, 5g protein, and 180 calories.

Why are Golden Corral rolls so good? ›

Lots of people who go to Golden Corral really like these rolls because they're soft and a little bit sweet. They're made with sugar, yeast, milk, butter, eggs, and flour. These ingredients give the rolls a delicious crust that's golden brown and soft inside.

Is Golden Corral made from scratch? ›

Our endless buffet menu offers unmatched variety of quality, made-from-scratch food for breakfast, lunch and dinner. With over 150 items to choose from including USDA grilled to order steaks and traditional favorites like pot roast and fried chicken, everyone is sure to find their favorite at Golden Corral.

Can you use milk instead of water in yeast rolls? ›

I used to use milk and water interchangeably. As it turns out it can make a big difference. So, remember to increase the amount of milk when swapping out the water in a recipe. At 27% fat and 38% sugar, powdered milk contains far more fat and sugar than fresh milk.

Can you let yeast rolls rise too long? ›

When the dough rises too much before it gets baked, it will collapse, rather than rise, in the oven's heat, and the crumb will be uneven and ragged. The time it takes for your dough to rise will vary based on the temperature of your kitchen and the temperature of your dough—and the alignment of the stars in the sky.

What happens if you put too much yeast in rolls? ›

Too much yeast could cause the dough to go flat by releasing gas before the flour is ready to expand. If you let the dough rise too long, it will start having a yeast or beer smell and taste and ultimately deflate or rise poorly in the oven and have a light crust.

Is bread flour or all-purpose flour better for rolls? ›

You can also use all-purpose in many bun or roll recipes, which tend to have lower hydration and rely less on strong gluten and more on butter and sugar for texture. (Though bread flour can still give you a fluffier, almost cotton-candy-like texture in most buns and rolls.)

How many calories are in a Golden Corral meatloaf? ›

There are 200 calories in 1 serving (104 g) of Golden Corral Meatloaf (1 Piece). * The % Daily Value (DV) tells you how much a nutrient in a serving of food contributes to a daily diet.

What is the difference between Rhodes Texas rolls and dinner rolls? ›

Texas Size rolls are 50% larger than our Dinner Rolls. The only difference is the roll size.

What is the difference between a bun and a dinner roll? ›

Rolls are typically proofed and baked closer together for a softer, “pull apart” result. This makes them great for dipping or eating alongside other food. On the other hand, buns are proofed with space between them, which makes them crustier.
